• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Tequila Jalapeño Cauliflower Crunch

This cauliflower dish is a variation from a recipe by the Chef at Chicago's Girl and the Goat. It includes cauliflower, tequila brined jalapeños, roasted pine nuts, shredded parmesan, minced garlic, fresh cilantro, and avacado oil. A crunch butter is made of butter, garlic, panko and parmesan.

Threw on a few inexpensive steaks (flat iron, delmonicos) that turned out tasty!

Munching on roasted pine nuts was pretty darn good while things were finishing up. Too bad they cost so much. I need to find a better source for them.
 
That looks really good. That must have made a big difference, pickling the peppers in tequila rather than champagne vinegar? (More than the difference in pickle type.) I wonder if something like pickled banana peppers from a jar would work very well?

Another stupid question--do you know why it's called "crunch" butter?

Yes and yes.....The prior times I made the recipe, I always used jar banana peppers (I thought we had a jar when I started this cook). Also, the crunch butter gets its name from the panko breadcrumbs. The butter combined with the roasted pine nuts provide a nice crunch to the dish.

I need to expand my veggie horizon too so I enjoy seeing what others are doing. I hope to get more ideas from the Brethren!
