what is a good grate temp to cook up some ny strips or ribeye on the uds? the bottom rack is 24" above coal basket and the second rack is 7" above that?

I wouldn't cook steaks on the UDS. I think the UDS is more for low and slow...for steaks you want high heat to sear it fast and pull it off. You have another grill to cook those steaks on?
