My youngest is graduating from HS in a couple of weeks. for her open house we are doing Gringo Mexican She is going to the U of AZ.
Any hoo. I'll be coordinating with the Ex for the party and will be making up the taco meat. Has anyone done a ground beef for tacos using a smoker?
Was thinking of something like a beef fatty then regrind and sauce to the right consistency.
 
pahutchens I just sent my youngest out of three kids to his HS Prom just this past Friday..It is great to get the last one outta HS..Good luck with everything...Try a Brisket, then chop it up
 
Go with the chuck! If you're expecting many at the open house go with a chuck roll (chuck rolls go 15 - 25 pounds). Rub it with your favorite taco seasoning and pull or chop.

Besides pit beans I've used pulled beef in chili, vegetable soup, and tacos. It's all good!

Oh yeah, smoked chuck or brisket are awesome for tacos.

Smoked ground chuck would work too.
 
We once chopped up a brisket flat that was a tad on the dry side, doused with some taco sauce, and sprinkled heavily with my own homemade taco seasoning that is light-years above that packaged stuff. :grin:

Does it have to be ground beef? Why not use carne asada? Have some steak (ribeye) sliced thin (1/4 inch or so). Sprinkle with salt, pepper and squeeze some fresh limes over the top. Get your coals really hot. Throw the thinly sliced steaks right on top and sear them. You have to turn them every 20-30 seconds. They will cook fast and you'll be suprised how tasty they are. Chop and serve in tacos, burritos etc. Simple is always the best and this is exactly how they do it in Mexico.
