• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Everyone got together again and this time we decided fresh fish. Of course grabbing a few things from the market I saw a nice and thick porterhouse that I couldn't get past.

I sous vided first

Then gave it a sear in my Blackstone pizza oven

Does a great job every time

The appetizer went real fast :becky:

Then the fish. Bought red snapper, branzino, striped bass...

Quick dust in flour

Fried it on the gasser in these pans. Works perfect for controlling the oil splatter

Crispy on the outside and flaky on the inside

A quick Thai style chili sauce dressing

Fine china of course for easy clean up

Good stuff to say the least if you like whole fish. Hopefully everyone had a great Sunday and thanks for looking!

Awesome job again Sako!

I haven't used the pizza oven to finish beef that had been cooked sous vide, but will definitely have to give that a try!

I hope you all had a fabulous time. What better way to enjoy one anothers company than over a few tasty treats?

Looks very good, great use of the pizza oven

Sako,
Looks super as always. But my friend Marty is spot on - that porterhouse really held my eye.

That looked like a great way to spend a Sunday, surf and turf Sako-style. Very nice!

I’ve questioned many times on getting a sous vide. How do you like it? Anything you suggest? So many options. Thanks

Nellie would kill for the fish Sako, I'll have the appetizer.

Thanks guys! Don't blame you but my nephew felt the same way because he doesn't like whole fish. I love whole fish.

I love it. Especially for thick cuts of beef and a steak like a porterhouse. You can do so much with it besides steaks. They're all pretty decent and have significantly come down in price. For home I'd say you're good with an Anova or a Joule. I guess Breville bougth Joule.

Mine is the first gen Anova and it's a bit bulky but I love it. New ones are a lot more slimmer and convenient with WIFI and apps so pick your poison. Can't go wrong IMO.

Outstanding, Sako!

The Thai chili sauce looks great on the fish. :thumb:

Spectacular!

I have never cooked or eaten whole fish prepared like this but would very much like to...

Thanks

Damn, Sako..... Porterhouse in the pizza oven? That is a great idea. All that food looks amazing. Nothing better than getting together over some great food! Cheers!

Out.....Standing!

Your preparation reminded me of the salt-packed & grilled fish technique during an evening on an Udon Thani sidewalk that made me feel like Anthony Bourdain... at least for a few minutes.

Fun to see you and family get together to feast on the weekends.

Kind regards from the 505.

Porterhouse app, well played. You set the bar high sir. I like fish prepared anyway not so much for the wife though. Your pics reminded me of fried smelt and how great the crispy tails are
