Sunday spareribs

Working 58 hrs a week. Look forward to Sunday Q all week. On the UDS @225 w/ a water pan for 3.5 hrs. Went to wrap and found out they were already done! Serving it with white sauce and coleslaw. No pics of the slaw, you all know what that looks like!

Amazing how one cannot follow a strict timing schedule when cooking BBQ. My ribs on my LSG vertical offset were ready early yesterday. No idea why.

Those ribs look great. Glad you checked them when you did. Had you wrapped, they would have been mush.
