Put on a 7lb flat and a couple of fattys Sunday morning. The fattys didn't last long enough for pron. Which was just as well, it was my first attempt at a bacon weave and they were less than photogenic.

While the brisket was in the cooler, made up some veggie kabobs and threw them on the drum.

I thought I lost the brisket about halfway through, the drum temp dropped to 125. The brisket went from 180 to 150. Got the temps back up, but it took 11.5 hrs to get it to 205. So much for hot and fast. Overall I was real happy with the results, it had good flavor, moisture, and was pretty tender.
 
Thanks guys. I like the bark to have a little crunch to it. I used a salt and pepper based rub and didn't foil it. I thought it might get too dried out with the long cook time, but it was real close to what I was looking for.
