Had some leftover shortrib meat and decided to make a nice chili. Marinated the meat for 48h in Stubbs Beef Marinade. Rehydrated a bunch of chilies to make a paste. Sautéed some onion and garlic, added the meat, chille paste, some tomato sauce and let it simmer for a couple of hours. Sunday's chili = Monday's dinner. It hit all the right spots.
To stay in the same mood, we had chicken fajitas as dinner. Fired up the SM grill but used a big CI griddle on it. Roasted some sweet peppers, sliced them up and added to some onion/garlic. Grilled the marinated chicken thighs and brought it all together.
