• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I cooked a couple of birds on the drum on Sunday. No special rubs. Just salt, pepper, cayenne, garlic powder, Italian Seasoning and Olive Oil. Smoked them in the drum for about 2 hours at 280.

Good chicken!

Hey Bigmista, that's some good looking grub. Do you cook at 280 the whole time or do you ramp it up at some point to get the skin crispy? The last time I tried to smoke a whole chicken the skin didn't turn out so well.

It was about 300 when the birds went in and dropped to about 280.

I like that skin color, looks crispy too! I'm drooling! I always cooked chix, at 225* is higher temp better? or best to turn it up at the end?

edit: Would it work for thighs also?
 
Keeping the rub uncomplicated can sometimes be the best. Those birds look great to me. What is the side dish? Rice with gravy? Did you use the bird drippins to make the gravy?
