• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

substitute for sliced brisket

For some reason brisket is getting harder to find in my area, and what I do find is about $4 a pound. I think chucks are a decent substitute for points, but what about for the sliced flat? Thanks, Tim.
 
I wouldn't pay $4 either. that said, go to the local Sam's warehouse and have them order you a case. It will only be six briskets, I wouldn't pay more than $1.50 a pound.
 
for sliced, make sure you get a thick cut, at least 3 in.
 
I've smoked beef bottom round and it sliced and tasted similar to brisket. Cost $ 1.90-lb at the local Sam's Club in 4 to 6-lb roasts. I apply a rub and smoke it in my WSM at 250F until an internal temp of 160F, then wrap in foil and add one cup of beef broth before sealing. I then continue to cook it at 250F in the WSM until it reaches an internal temperature of 190F. A 5-lb beef bottom round takes about 7-hours to reach an internal temp of 190F. Remove from WSM and allow to rest 2-hours, still in foil, before slicing. It's moist and real tender.
 
Yep go to yuur meat market and have them order it by the case. Packer briskets buy the case and you should be able to get what you want. Accept no subs. get brisket you can't fake a true brisket eater out.
