Stuffed stuff...

I was trying to figure out what I wanted to do for the "Something Stuffed" throwdown. I figured I ought to enter as the theme was my choice. I could not come close to replicating the effort for the Giant Hamburger, so I've narrowed it down to; #1. Chicken Breast stuffed with Smoked Polish and Smoked Linguica sausages, along with some Pepperoni and some PepperJack Cheese. Seasoned with Garlic Salt and Todd's Dirt. And #2, A Pork Loin stuffed with Smoked Polish and both smoked and unsmoked Linguica. After the PL had been in the smoker for about an hour I made a bacon weave aqnd wrapped the loin. I knew if the weave went on when the loin went in the bacon would be really burnt... I seasoned the loin with my own rub. I had a loin end left over so I smoked that along with the rest, I will probably end up making Chili Verde with it. I smoked everything at 225 over Pecan and Hickory for flavor. Hope you enjoy, I did, and will.

Which do you think I should enter in the throwdown?

Whoa, tough call. They both look good Bo! The roast reminds me of a Brach's candy thingie - you know, the white nugat that had the jelly stuff throughout it? Fond memories...
Bottom line, I'd hit both of em.:thumb::thumb:

Found what it reminded me of. I definitely vote for the roast now.

That's a tough call...the pork loin with sausage looks so juicy and porky...but that chicken has that cheesiness oozing out....I don't know if I can decide!

Thank you, and yes, it is legal. But, if it wasn't I would want them to enforce that law also. You really don't wanna start this here...
