Knows what a fatty is.
Picked up a 5 1/2 lb pork loin on sale. Rubbed with a little EVOO and gave a liberal coating of salt and pepper. Stuffed it with spinach and fontina cheese. Wrapped it in a nice cozy blanket and threw it on the Primo at 350. Pulled at 143 and let rest for 15 mins. Very tender and tasted great!
