While picking up some japs cheese and JD maple to make dome 'dillo eggs I saw a couple of thick cut pork chops perfect for stuffing. Also they were half price to move them out as the pull date was 2 days away.

they were stuffed with colby jack and mushrooms then sprinkled with Plowboys.

I have not found a way to keep the cheese from leaking out however they were good.

I like to cook my chops hot and fast since most pork is so lean these days.

If you want to give it a good seer on each side, you can set them in a taco shell rack with the seam on top to keep the cheese from leaking out while cooking. Assuming the chops are large enough. If you use toothpicks to pin the seam you can use a few extra and put them in at 45* angles and fairly close together. It's a pain in the arse to pull all of them, but it helps keep the cheesy goodness inside.
