• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I flattened out some boneless skinless chicken breast. Added some shredded cheddar and chopped jalapenos and rolled them up. Wrapped with bacon and onto a raised grate on the BGE at about 450. Picks to come.
 
Here's a couple of pics. Wife will take one to work tonight, and I'll have mine in about an hour.

Are you talking about Pamela...oh, sorry this isn't woodpile....:-P That looks goooddd, and I just had lunch!
 
They were really good. Next ones will be better with more filling. These were made of breast fillets and wern't big enough. I'll use the larger ones we just bought at Sams. They're about twice as big.

The recipe is a little of a copycat from a small Texas border town bar and grill I saw on the Travel channel. They add chopped onions and glaze with a terryaki sauce. I dusted with Dr BBQ Big Time Rub. I'll keep experimenting with them.
 
Wow. Looks like I know what I am going to be cooking this weekend. Those look great. My mouth is watering as I type.

Do you think I could do something like these on my WSM? And about how long did you do them for?

Not sure about the WSM. Without the waterpan maybe. They grilled them. Next time I'll go direct without raising the grate. It'll get them 4 inches closer to the fire. I cooked until the bacon was done. And chicken was to temp. I think it was about 15 minutes. I used center cut, but the slices were a little short.

I'll be cooking for my Mother's 70th birthday, Labor Day weekend. Plan on doing Prime Rib, and a chicken dish, and I've been trying to decide what to do with the chicken.

Gave this a test last night with a variation.

Cut each breast into 3 cutlets.
Stuffed with fresh mozarella and roasted peppers.
Wrapped with bacon.

I smoked some, and grilled some.

The general consensus was that the grilled was better, so that's what I'm going with for the party.

Sorry, no pics, the weather was horrible here, plus there was a family emergency of sorts going on too (all is well now), and there are only so many things that I can do at once. I'll be sure to provide the requisite mouth watering pics after the Labor Day Birthday Bash though.
