• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Don't know what to call them, but addicted to them.
I saw a version on Emeril several years ago and have been hooked ever since

Basically meat and "stuff" inside a thin shell of biscuit dough--cooked and baked--frozen--then micro'ed for a quick breakfast.

This batch used:
Buckboard Bacon and Fatty.
Sun Dried Tomato.
Finely chopped onion.
Garlic powder.
Emeril's essence.
Egg
Grated cheese.

The biscuit dough is just Grands large canned biscuits rolled or mashed really thin.

I just cook all the filling except the cheese and place it onto the mashed biscuit dough, add some cheese, lay the top on (or fold in half), and mash the edges to finish.
Bake 15 minutes or so.
Let cool and ZipLock.
To eat--MicroZap for 1/2 to one minute and grab a glass of cold milk.

No muss, no fuss, no cleanup for a balanced breakfast with all the essential food groups (BBQ, cheese, spices, onions, and bread).

Filling can be anything you want--good way to clean out little bags from freezer.

I was watching Sucess Story on Food TV about people starting restaurants.

Chef was making something, think they called them epineenies, or something like that.

Spinach and crab or something. I was like, I'd pass on that.

Turn, open the computer, this is the first post I see.

Tim's done the same stuffed pocket dealie, with bbq stuff and breakfast goodies.

Here's a twist I already am considering. I got cornbread in the Pillsbury tube. Roll them out like you have. Add a few dollops of chili and cheese in the middle.

Sure glad I'm not on Fatkins, cuz I will be experimenting with this stuff all winter (I get the oven back!!)
 
I got curious and tried to find a name somewhere for these.

"Country Stuffed Biscuits", from the Hideway Bed and Breakfast menu, seems to fit:

Country Stuffed Biscuit

Ingredients:

2 thawed biscuit rounds
3 whipped eggs
1/4 cup diced ham
1/4 cup grated cheese

Steps:
  1. Preheat oven to 350, low fan roll dough into large oval shape place on cookie sheet.
  2. Lightly scramble ham and eggs divide and spoon eggs on to dough.
  3. Sprinkle with cheese and fold over.
  4. Wet and pinch edges closed.
  5. Bake until done, about 10 min.

So, unless someone has a more accurate moniker for them....."Country Stuffed Biscuits" works for me

I now also want to try doubling cresents, and adding beef stew mixture leftovers.

Reminds me of Mrs. Lovett's Meat Pies. Use to get my hair cut in the barber shop located above her resturant. Both places closed down a while back......never did figure out why.
 
Emerils was called Nackotish meat pies.. some pork or beef sauteed with "the trinity", allowed to cool then put into the shell and deep fried.

I do a mexican version of Mexican meat pies(tortas de carne)... ground or shreded beef and/or pork with some doctored up taco seasoning and beans put into the shells then baked.

there is also a real simple one. Season some ground beef(and use some herbs like fresh parsley). Get some small pita bread, or cut some large pita breads into quaters or triangles and press some of the raw seasoned beef right onto the bread and bake it till the meats cooked. The juices form the meat soaks into the bread. Nice quick snack. Good stuff!!

Variation; walnuts or pinoli nuts and shreaded cheese added to the groud beef.
 
I'm liking what I'm seeing

I just happen to have some leftover elk stew that I may have to try this with. Self contained elk stew to go. Gotta love this place. OK...now to figure out how to post pictures in the new digs.....

Tim, great idea. I'll definitely have to try kapini's. I'll pass on the milk though, I like my breakfast eats with a V-8!
 
Welcome back Elk. That is a gooood looking pot of stew. I bet it would work great in a kapnini.
 
kapnini?? Sounds like something ya find in the antipasto platter.
