Just got back from the big St Nicholas Greek Festival. Should have taken a pic of the pallets of KBB they had stacked up. Great Gyros, Lamb Shank, Grecian Chicken and Steak Kabobs. Plus all the regular Greek goodies like baklava and spanikopita.
Hell of an operation and they feed thousands this weekend.

These briquettes are already grey but those pits are HOT! That's my buddy Jim the Cat-Man with the long gloves and apron. He's pointing at a large steel pan of marinade they dip the steak skewers in after they come off the grill. Mixture of lemon juice, olive oil, oregano, garlic and other spices. Jim tells me I'm not Greek enough to know the rest.

They have 4 of these pits going all day.
