• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Do you think it would be a good idea to spatchcock a turkey to keep it cooking more evenly? Would that affect the moisture?

Never affects moisture! Tastes great and cooks quicker like mentioned. Faster cook = juicier bird imo.

I did a spatchcocked turkey last year for "friendsgiving" now that we are out of college and have room for everyone. Never cooked a whole turkey before and it turned out great.

I find this true.

When cooking birds at 375+ ive noticed them juicy well above 165. I prefer the texture of dark meat at like 190
 
Yes - I think you will find your spatchcocked bid even more juicy than normal. Without all that dead space in the middle, the dark meat can get to proper internal temp without drying out the white meat.

I did my Thanksgiving bird this way last year. My wife was giving me a hard time about it...she thought I was performing some dangerous experiment while risking the dinner for several families. Now, she wants me to "do just what you did last year". Best turkey I've ever had.
 
Yes, agree with all of above comments. I did it last year and I am doing it again this year. A better tasting and juicer bird and its faster!
 
I am cooking two turkey's this weekend. I'll give spatchin' them a whirl.
 
It works great!

Look at the amazing ribs site as noted above. I also did their "stuffins" recipe. It was a hit last year. turkey was done in about 3 hours (12 lb ) I will be doing another one this year. I used the grill and smoked it with apple wood for one hour so it had a nice light smoke to it.
 
I spatchcocked a turkey and then severed the backbone to separate the Thigh and leg half from the breast and wing half. It was nice to cook the halves to different target temps and the result was beautiful! The pics are from an oven experiment
