16Adams posted about spam a while back. I couldn't remember the last time I had it (the 90s maybe) so I thought I would pickup a can and throw it on the smoker.
I sliced it into quarters and hollowed out the center and smoked it for about an hour over hickory.

Filled with a mixture of cream cheese, Mexican cheese blend, & roasted Jalapenos.


It was an interesting experiment. If I were to do it again I might slice it a little thinner and use less filling.
The ribs turned out ok. The taste was great but they weren't as juicy as I would like.
