Hi gang.

I've done a whole southern dinner, I've made the Gravy from scratch with a Rue.


Oh poopy, I forgot the colar greens, Next time.

Homemade White Gravy with recipe, Black pepper to taste, Garlic powder to taste, a half tablespoon Minched Onion. cup of Mini Baby Bell mushrooms trimmed and chopped( whole recipe ).

I'm pretty sure it's against the law to have a "southern" dinner without meat.

The gravy looks good and I love baked taters.
 
Intentional or not, for posterity's sake, you made gravy from a roux :grin: as a rue is a street. I know, I know, grammar police...don't want to propagate a misuse of the word.

And that plate is screaming for something, anything, deep fried!
 
Frozen Lima beans, They have zero sodium, Canned has about 400 sodium 1/4th cup.

Your right Grail, I'll do a proper one when I do chicken fried steak.

I spent an eternity today shucking and peeling fava beans from my local farmer's market. I'm still aimlessly searching for a new recipe for them. Southern style looks good.

You already shucked them, but next time....

If you can get baby fava beans, you can grill them with oil, salt and pepper and grill them in the pod and eat 'em whole. I was surprised.

Par steam the lime beans to get them about 50% cooked, add them to ramekins along with fresh corn kernals, fresh peas (which I assume you just shucked), some grilled red bell pepper and some pearl onions. Meanwhile, you already have browned up some bacon to almost done. Grease was used to make a gravy, nicely seasoned with black pepper, salt and some parsley. The gravy is poured over the veggies in the ramekins, then a mix of 30% grated Parmesan and 70% bread crumbs is placed on top, put some crumbled bacon and bake in oven or kettle at 400F to heat through and melt cheese. Ta daa, succotash gratin.
