Marinated pork butt for slicing, soaked in bine w/ br. sugar, salt, oj... for about 10 hours. Beercan chickens...
Pork and chicken was juicy, but bland for my taste,
(should have done it regular and pulled,) but some Sweetbaby Rays, and all came out pretty good,
don't know what I did, but my smoke was mild today, than other days...used the same wood, lychee(mild), and mesquite.
Finally figured out my heat problem with the HELP of Deeze, Tony, Swamprb, and Smokingator...THANKS GUYS! (smaller/taller basket)too well, all holes plugged, and still could not get below 250 for a while, Thus TINFOIL mod:
