• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Smoking the Bird

I am smoking a turkey tomorrow for Easter. I found a great rub recipe in a book by Paul Kirk. I was wondering what kind of wood is reccomended for smoking "the Bird"?
 
I'm partial to maple for bird. Some reccomend cherry but I've never tried it.
 
I'm as big a fan of cherry as there is, but don't use it on birds. For poultry I prefer apple with mabe a little hickory or pecan in the mix.

I add hickory to the mix when doing turkeys too, since the meat is so much thicker than chicken. I'm a big brine fan too & that seems to help me out also.
