My mom just called from Florida and she is going to go to Joe's Patti fish market next Tuesday and pick up my list of seafood. And on the list I have a whole eel with out head or tail, I know I will have to clean it & prep it.


But my question is this? How long can I smoke it for? and I can smoke it until it reaches 160*f?

Also what do you suggest on the kind of un treated wood to smoke it On? ( I'm partial to oak )
 
I like eel in sushi, but never had smoked eel before. Looking forward to seeing the outcome of this smoking episode. :thumb:

Derek, I have just started smoking some fish and I think its hard to fark up. I have taken some fish up to that temp with no problem at all.

Would think that you don't want to over cook it, so if a probe goes in as the saying goes, its probably done.
 
The smoked eel I have had was smoked on apple or cherry wood, it was smoked to temps more like 135F, until just done. Be aware that it smokes fast, it is oily and somewhat forgiving, but the filets will be very thin. We cleaned and boned, leaving skin on (not to everyone's preference there) and smoke at 210F.

I do not understand why you so want eels. Phubar will disagree with this, and I grew up eating anago and unagi, but, I just can't see going out of my way to get eel. That being said, you can try Chinese markets, Northern European markets etc. You are in Michigan, you might be able to to get (gack, gack) lamprey (gack!) during certain times(GACK!) of the year (Oh Farkin' GACK!).

I do want raw eel to smoke, bro!

I love smoked eel, but I'm afraid that the sodium level in the smoked eel I can buy at the co op stores will be chalked full of sodium. And if I can get raw ell and a Oak plank to set on the top of my grill grate, I'm in business.
 
Smoked eel is one of the most delicious things I've had. When I connect in Schiphol I pick up eel in the See Fly Buy shops and eat it in the airport. Our Asian markets do not have it fresh or I'd be smoking it all the time.

I love smoked eel, It's one of the best fish around the planet.

Thank you Phubar! My mom is habing a hard time finding eel to bring home for me, so it may be a grouper, or some other smoking fish. Wish her and me luck in getting raw eel.
