xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.
I did some for T'giving. Used 4 cps raw nuts, 1/3 cp butter, some hot sauce and rub. I used about 1/4 hot sauce (like crystal). Let all that soak about an hour. I put mine in an aluminum roasting pan, stirred occasionally (not really, once) and let smoke for an hour. They were good.
I found a low carb snack recipe for pecans - it is butter sugar twin cajun spice and pecans. How would I put this in the Bandera to get the most smoke in it ?
It's nice to know that some of the "new guys" are fitting right in
Back on topic: the wire baskets (all sorts) would work. I think a cast iron skillet or griddle could work too -- cast iron hold the heat so well that you could get some toasting action going at the same time -- probably have to watch the cooking closer -- seems I remember someone saying "If you can smell your nuts cooking they're burnt"
Ok ,
This is one of the posts that got lost.
My Boss at The Paper is giving away Pecans to us
underlings. My question, smoking them????
What kind of seasoning?
What kind of wood?
How hot & how long?
Water pan? Yes or no?
And again Ray I’m not tryin to step on
your (nutz) or toes. It’s just that these nuts are free
and I’d like to try my hand at them.
Ok the whole "pecan roasted thing" got lost so with out furthur adoo.
Melt in a skillet, 1 stick of butter. add 1/2 cup of brown sugar, not too hot easy stuff to burn. Pour in your pecans Probably up to a pound or so. This is where it shows that the recipe was never written down, which ain't no big deal. On the side mix a cup of sugar with a 1/4 cup of cinnamon, a teaspoon of nutmeg and a teaspoon of allspice. Once your nuts are warm and toasty gently remove from the butter and place into the sugar mixture, shaking off all excess sugar, and saving for laterl.
