• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

:-P Ok, the wife has spoken...She wants Ham, smoked...huh? No idea WHAT? HOW?
What do I buy? I usually just get a Farmer John, and bake...
Guys...(and girls) I need some help.

I have no idea, where to start...
 
Smoke & Spice by the Jamisons has a good smoked Ham recipe, I've done it twice it was a hit, I can't remember the recipe, but I know one time I used Cherry Preserves.
 
i have done two 17-18 lb hams in my offset. i bought the ready to cook, covered them in apple butter and let them set in the fridge overnight. smoked with apple wood and they have been the best ham any of us have ever eaten. i got a request for one the last time i was home.

Good advice smooookin or you could do it Dog Style:

1) Get one of those precooked half hams. Butt or shank.

2) Remove plastic wrapper and put in smoker at about 225

3) Smoke for about 4-6 hours

4) Coat with favorite ham glaze and cook for about 1 more hour. (I use a combo corn syrup pinapple thingie) Let me know if you want a recipe. Wifie does the cut thingie and punces cloves into the diamonds. Personally I don't care for clove, but she likes it so...

5) Slice and eat.

For something a little different try smoked ham salad. I've done it 2 ways. Smoke the ham first then make the salad or make the ham salad first then put it in an aluminum pan and smoke it. Makes some flavorful sandwiches.
 
Me likey smoked ham. Give it the diagnal cuts about 3/8 deep. Smoother it with your choice of fruit pie filling (apple, cherry, razberry). Once it hits about 150-155, slap some honey all around her and put on a few rings of pinnapple with marichino cherries to top it off. Then take her to about 165 internal to finish her off.

You'll be wishing Christmas came every month.

If you are worried about drippings, put it on a rack in a pan - but

I think you are far enough above the coals to be ok and would not have to worry about flare-ups - one of the things that makes direct cooking so special is the flavors generated when drippings hit the hot coals

Think of all the fat that comes off a butt - What's a little butter :wink:

smoked with apple wood and cherry is the way to go. I believe the last time smoked a ham it took me 12 hrs.

I was wondering, can you melt down the applebutter, and inject it?
Honestly I don't know what appple butter is,(Kauai,coutry hick mod.) I just saw it in Walmart, sams brand....

Apple "butter" is a preserve made by slowly cooking applesauce down with spices and cider, until it is thick and flavorful.
No real butter, no fat. Lots of concentrated apple sugars, and flavor.
 
Thanks qman! The first ham will be made simple, maybe the next one will be tht Dr. Chicken one... sounds like its worth the extra effort.
