• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I received my Amaze-N smoker pellet tray yesterday and it's COLD outside...........a great day to smoke some cheese. I have white cheddar, swiss, mozzerrella, and brie. I'm going to smoke with the apple pellets about 2 hours. The hard part will be staying out of it while it mellows in the fridge. :-D



 
well I did a 4 hour smoke when I smoked my cheese. Its been 1 week. I feel 4 hours was a little over kill. But when I was doing research everyone raved about 4 hours! After I did it, all I see is people recommending 2 hours? Whats up with that??!!!

I'll wait and see in 4 weeks what its like. I tried a piece this morning, if its anything like mine it will be easy to wait! It tasted like an ashtray haha! So now I'm more motivated to just leave it alone!
 
I figured I'd try 2 hours the first time out and see what I get. I definitely don't want to over-smoke it.
 
I use 2 AMZN tubes smoking at the same time and go 6 hours. In my experience 2 hours doesn't give it a smokey color or enough smokey flavor.
 
hey, I also might want to add that I tried a piece at 4 days. I wanted to use a block of the cheese to examine how the cheese ages and mellows. at 4 days it was horrid! You can tell even 3 days later the smoke mellowed out a good bit, still tasted like an ashtray but I can tell its gonna be great! gonna think about doing a 2nd batch today! I should of bought the 6 inch tube smoker tho honestly! Not sure how the 12 inch tube will run with half pellets!

I know, I shouldn't be touching the cheese and letting it sit for several weeks! But I just love testing and checking the progress on stuff like this! lol

Did you buy a combo that came with pellets? If not where did you buy your pellets? I need to buy a big bag of hickory pellets. Seems like hickory will be my most used for cheese smoking. I was real surprised at how much smoke the tube smoker put out!

Keep us posted! I'd like to see the finished product!

Well that makes me feel a lot better when it comes to me over smoking my cheese! But like I said above It's really starting to mellow out compared to a few days ago. So I'm guessing a 4 week aging will do the trick!
 
blazinfire, I got the combo with pellets. I'll post pics when the cheese comes off.
 
And done!

I was concerned about over smoking the cheese, so I pulled it at 2 hours. My guess was good as to how much pellet to use. It was close.

The brie picked up a nice patina. Food Saver says vacuum packing brie is a no-no due to anaerobic bacteria, so it got plastic wrap and put into its container. The rest was vacuum sealed and put away.

Now, to stay out of it! :-D

Nice color on that cheese! Can't wait to find out how the swiss and mozzarella turns out!! I was thinking of smoking those two cheeses on my batch but I didn't know the melting point and I wanted to start with something simple.

I was thinking of doing a batch of cheese this weekend. Gonna be in single digits to low teens for the next couple days! Only problem is I've tried apple smoked cheese from a store I didn't like it! So I'm scared to use the apple pellets. Not sure how cherry will work, I will not use mesquite for cheese. At least right now! So I haven't decided if I wanna order more hickory pellets or choose apple or cherry.

I would start with 2 hours IMO. I started with 4, as I said in an earlier post I tried it at 1 week today. Well when I resealed it, my vac seal didn't hold. Well I figured why not slice a couple small slices before resealing it. After eating those slices I can safely say when 4-6 weeks rolls around a 4 hour smoke will be awesome! But that all depends on your personal preference. I will enjoy the extra smoke flavor. Some, maybe a lot of people might not.
 
Yeah, mesquite would be way too strong. My next cheese smoke will be cherry to try it out.

Good idea. I've been using pecan chunks in my WSM. I'm really liking the flavor I receive from it! So maybe I might pick up some pecan pellets as well. To Amazon I go!

I need to do some research on what else I can use this thing tube smoker for! Got any good ideas? I bet it would of been awesome when I was trying to "smoke" food on a propane grill hah! Trying to do that is the reason why I bought a smoker in the first place! Didn't work out real well!
