• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Small pork loin cook time?

Throwing an 18.4 oz Smithfield pork tenderloin on my WSM. Any thoughts on how long this should take to cook at 280?

Numbers suck in BBQ/cooking; 3:2:1 and 2:2:1 only "work" because it is essentially overcooking them.



That said, I'd expect it to temp at 145*F in 45min or less. Don't get me wrong, thermometer numbers suck too (but are good for lean stuff).. LOL
 
I hate cooking to a time schedule. WSM? I'd give it an hour or so... or I'd use a crock pot and let it go all day. one method is very temp sensitive... the other is very time insensitive.

Both are pretty damn good.
