Just to show that I'm not all about pellets...

I'm on the Rodeo Express committee for the Houston Livestock Show and Rodeo. Years ago I took over running the pit and did that until I had a 3 year work transfer. Well, now that I'm back, I've regained my old Pitboss spot. Figured I'd show a few shots of what I'm working with. I didn't get any shots of food on it, maybe next time.

One big and one small pit


HLSR supplies the wood for the duration, mainly Oak, but there is some mesquite that makes it in from time to time. I think I'll bring some Pecan next time from my trees.

Oh yeah. One of the team members brought some Chappel Hill sausage out, one regular and one hatch chili. Both were excellent. I stuck them at the mid to far point of the grill to keep them out of the hotter temps and they turned out really well. One day I'm gonna have to bring out some fresh made to throw on there. I think I'm gonna do chicken next week.
