• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

SKD Workout!

The SKD is getting it's biggest workout so far today. Started a 10 pound brisket at 5:30, through in one rack of spares at 6:45. A buddy of mine showed up with a 9 pound leg of lamb and I've got 2 fatties going as well. Just added a second rack of spares to the mix.

I've got 9 more fatties to cook for friends today, another full rack of spares and the guy with the lamb just called and asked of I could do some venison for a friend. Then - late this afternoon - 2 pork tenderloins.

I think that's it.

The brisket was foiled at 165 after 4 1/2 hours. I plan to take it to 190-195, then cooler it for a couple of hours.

What can I say? WOW, you are going to be smelling like smoke for awhile. Looks great.
 
Picked up an SKD today. It's seasoned and ready to go in the morning with 6 racks of dinosaur bones marinated in Tk's Dr. Pepper recipe.
Realy impressed with temp control just from the seasoning exercise.

Ribs turned out great. A little too done on the lower rack, but that's part of the learning curve. Need to get a charcoal basket made right away. The oem set up is pretty light duty and too low. The ashes were piled up to the fire grate in no time. Other than that I am impressed with temperature control compared to my "consumer grade" horizontal offset pits. The SKD sure has a lot more capacity.
