• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I am going down to visit the family in TN after Christmas.

They have whole sirloin butts in the 12 lb range on special for 2.99.

My plan was to do an initial cook at 225 till 115-120 and then put in a 500 degree oven to get a crust.

tTis is how I normally do rib roasts, so I figured why not a huge sirloin the same way.

Any thoughts, and has anyone done a similar thing with a large sirloin roast? Theoretically, this should work, but I wanted to tap the Bretheren experience bank before I did it.

I dont see a problem with it The only sirloin roast I have done was around 300 and took off at 135 and sliced for sandwiches

Thanks George--I do em that way for sandwiches myself.

This time I was going for more of a Sunday roast beef thing--20 people extended family and impressive sized meat at the center.
