• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Anybody own or know anything about these? They're supposed to be the bees knees but they are hella expensive. They sure are purdy, though, and if they are indeed superior I may have to buy a santoku... for $150 :)

Try a search on Shun, time permitting.. I recall seeimng that name quite a few times in other posts about knives on our site.

I've been using Wusthof (german) knives for years and really like how they hold an edge. I've never used the Kershaw Shun knives, but a friend of mine swears by them. Like the ol' saying goes....ya git what ya pay fer
 
Yea, do a search on knives. lots of talk about Shun and other stuff.

If you want a really good santuko, try the Tojiro Swedish steel one for $45 from japanesechefsknife.com I own one and it's a really good knife. Their High Speed Tool line is made of harder steel, but is more expensive.

I have 2. They come very sharp and hold their edge well. The are a little on the brittle side and can chip if dropped.

That is a handsome knife Tom. I thought part of being a santuko was the granton relief along the cutting edge, which I do not see here. ? Am I missing something?
 
I use those knives to cut all of my meat I don't own any thing to expensive though since I am kind of hard on them. But I like them better than any chefs knife I have ever had.
 
If you like Japanese knives, look at MAC or Misono. They are very high quality but not as well known as Shun. Probably because they don't have a personality behind them. Japanese knives are great especially if you want to due 2mm slicing, but if you want a good strong knife that hold a great edge you cant beat Wusthof.
 
I have about 7 Shun knives... I've tried lots of others, but I continue to come back to Shun. They hold an edge really well... I've used MAC, and I don't like them nearly as well. Wusthof steel isn't as strong as Shun's alloy, and I like the feel of Shuns much better.

But that's me.. If you like another knife better, use that one instead. Best thing to do is go to a store that has several brands and try them all for feel. The only thing I wish I could get in a Shun is a 12" chef's knife, but they only go to 10".
