• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

shoulder color

Great site guys. I have a question about the color of the meat when I smoke a boston butt. I've seen others meat come out almost white when it's pulled, but mine is more of a grey with a smoke ring. It's fully cooked and tastes great, just wondering why it's more on the grey side.

I have don't remember seeing white Butt meat. Mine is always a gray color, too. I have been smokin' for 20 years. Maybe we are doing something wrong!!!!

If you mean white like the color of a center cut pork chop...., no, I have not seen that extensively. I do get varying degrees of greyness with some real light colored meat as well based on the different muscles in the shoulder with the deep pink portions from the smoke.
 
Gray to pinkish pretty much sizes up the color of pulled butt. Sometimes one muscle and the meat near the bone is darker. (darker meat is really noticeable when pulling a picnic).

mines allways been pink and varying shades of grey.I swear 3eyes pics are getting better every time he posts one. makes my skimpy pics not even worthy of posting.

Thanks for the kind words, but DON'T stop posting pictures!!!

It's kind of funny but I shoot about a hundred pictures like this a week at work. My subjects have no color, no contrast, no special angles and no definition. Hobby pictures (like foodie pic's) are really a challenge for me. And it goes without saying ... I like the few keepers that make me drool.

At the shop we hand pull a ton of butts each week, and yes their is 1 muscle area that is pure white meat.............me I don't care for it, so its chopped extra and blended in w/ the regular stuff..

I did a picnic last week and it had a few spots where the meat was fairly white.

Your pics of pulled pork make me wanna eat so bad, and I ain't even hungry.

Remember that pork is a relatively "white" meat to start with. If you don't get seasoning deep into the meat and/or smoke pentration, it will come out "white". Shoulder in particular can have some pale spots because the muscles are pretty dense.

As someone pointed out - the white meat will have little flavor compared to the rest of the shoulder. I occassionally get some white sections in a butt, too.
