My Baby Boy came home this weekend for a visit so we indulged.I had a whole Choice,bone in ribeye loin that I had been wet aging for 60 days for the occasion.I salted it,seared it with my weed burner then seasoned it and tossed it on the BGE,indirect 230f til it probed 116 internal temp.I let it rest for 30-40 minutes loosely tented with HDAF.I was happy with it.
