Full Fledged Farker
The past couple of weeks, I've noticed my UDS out on the back patio looking more and more lonely as the days go by. I suspect that he's a little jealous that my insulated cabinet has been getting all the love recently. With my wife going out of town for the weekend, I decided it was time to make the UDS happy again.
I decided I wanted beef short ribs so I went to Sam's on Thursday during my lunch hour to pick out the winner. They didn't have any short ribs out so one of the guys in the meat department went to get some for me. After conversing with him, I realized it'd be quite a bit cheaper per pound to get the 2 racks in cryovac rather than just 1 rack, so I did that.

As I was on my way back to work, I realized, "Oh FARK. How are these going to fit in my work fridge?!" :laugh: You see, in my moment of bbq weakness, I failed to remember my work fridge isn't exactly big. After taking all the shelves out, it fits, BARELY. Crisis averted.

This morning I woke up, got the silver skin and extra fat trimmed off 1 rack and got as much hard fat cut off as I could. There's still more hard fat than I'd like, but oh well. I really like the marbling on this rack.


The UDS got up to my target temp of 280, rubbed the rack down with Plowboy's Bovine Bold, and let them get smokey on KBB and Pecan Chunks. The 2nd rack from the cryovac went back into the freezer for later.
4 Hours in - time for the first peek. These things are farking huge. :laugh:
