• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

i'm picking up my new pit this week from BATES PITS (www.batespitts.com) in humble, tx. its a 20x48 horizontal with a "hybrid" firebox (square bottom half, pipe top half).

any suggestions as to which oil to use for seasoning? i used regular veggie oil on the dera, but i've heard of folks using peanut oil.
 
I use peanut to season, higher burn temp, then spray on olive oil on hinges and general application every once in a while.

Only rust so far is on top of the lid, which is common cuz of the heat.

Most of what I read that mentions specific oils list olive or peanut. I don't think it matters. Peanut has a higher smoking point than most other oils, It might be worth the few extra $$.
 
Pam works fine, but peanut oil is pretty much the oil of choice. Look at the section in Bandera 101 for seasoning. Alternate between heavy smoke and high heat, 400 if you can get it that high, then clsoe the damper and let it smoke for a bit. Although alot of us used just charcoal to season, i think ya need to go with some logs to to generate the heavy smoke. Altho the higher heat is more important, still generate some smoke. Break all the rules, use cold wood, close the dampers, white instead of sweet blue is what ya want. DONT use green or unseasoned wood cause it can leave a nasty resin int the pit.


Go for at least 4 hours.
 
I use whatever is in the cabnet except EVOO which is too expensive for seasoning the whole pit.

i'm picking it up thursday, and will likely season it friday and cook saturday. i'll let you know.

i can tell you already that bates pits has great customer service. the guy that runs the place is steve bateman. i knew what i wanted, including some "unusual" requests (such as the hybrid firebox that will allow me to grill easier with the firebox) - so i gave it all to steve, and he had done exactly as i asked. i call him all the time, and he always answers my questions. i also send him emails all the time. he responds with pics showing the progress of the pit. assuming the pit cooks worth a damn, he is a winner. and the price was much better than some of the other big pit makers in houston (klose, gator). bates is a much smaller shop, and i like the hand holding.
