• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Screwed the rib trimmings up! :D

I'm "sorry" to report that the rib trimmings I spent all afternoon cooking are screwed up! :D Poor things just fall off the bones!

It sure is fun cooking this stuff when I don't have to satisfy some judge! :mrgreen: I wasn't even trying to keep them anywhere close to "turn in" - did a 3-3 and chowed down.

I'm amazed they were so tender since I didn't "braise", boil, or oven cook the ribs. Oh yeah, I took the membrane off too - is that allowed? :twisted: And I went way over the 2 hours in the cooker that the TV guy did - and mine were only at 240 degrees - I guess that messed them up too. (I am SO glad I didn't see that show!)

I hope I don't have to turn in my Brethren hat and apron!

The chicken turned out great with 3 hours in the WSM - just rub and apple juice - the chicken is for later in the week and there are plenty of "rib" leftovers, too.

What a great day - a few minor chores and woodsmoke for 6 hours! :D

I reheated (boiled in foodsaver vac bag) some of the same ribs from Mobile.
Not bad, to say the least--just added a touch of Woody's (thanks Stacey) and they were good to go :lol: :lol:

What a tragedy! THey must be really screwed up if you didn't braise them. THey probably aren't even edible.
 
It's sad! :D The 'thin ends' are almost boneless anyway - you could just lay it on two pieces of bread and have an instand rib sandwich.

I tried to pick up the "breast" pieces (the bony part at the thicker side of the slad) and every one of them broke into big chunks. I was SO upset! :D

It was a great day and a fun cook. Even at home I sometimes get to concentrating on the "perfect" rib and miss the fun of just burning some wood and charcoal.
 
Yeah, the lesson is to always make sure you have meat in the freezer! :D

You know, you can always boil yer rib parts! I hear everyone is doing that now a days. :wink:
