• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Those look nasty. So for the record, just to make sure I never make anything that nasty, did you cook them over direct heat? How'd you keep the bacon on? Did you you make the dressing or is it a premade? Mmmmmm, so nasty. Can't wait not to eat it....

hahaa!
- direct at 300 for 10 minutes with maple chips
- stretch the bacon as it wraps around the scallop and it will stay. it's a whole lot easier to flip em without the toothpick
- premade tastefully simple dressing
- swipe the jalapeno with the scallop for an extra kick

Nice.

I just prefer to roll them in a little oil (which has had fresh garlic crushed into it a few hours in advance), sprinkle with a little pepper and then popped into a very hot dry pan for a few seconds on each side. Doing any more to them always detracts from the fresh flavours.
 
I cooked some Sea Scallops wrapped in bacon myself this weekend, might fine aps they are. Didn't use any wood chips though...next time!
