• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Just curious how all you sausage makers prefer to season your sausage. Do you purchase the pre-mixed seasonings from one of the many sausage supply houses or just follow a recipe and mix your own? I have several good sausage books with recipes but , Like a lot of things, by the time you buy all the seperate ingredients, you can have a small fortune wrapped up in spices.
 
But once you have the inventory, you can do so much.
I always make my own seasoning mix.

I have used some of the recipes from Three Men With Nothing Better to Do and found them all to be good. My go to though is a commercial product out of Texas called LEGG's. It is cheap as heck and small bag seasons 25LB of sausage. I love their hot and have been wanting to try the Italian. I don't know if it is a regional thing or not but all of the more traditional butcher shops around here have it.

I am definitely trying the HOT LINK recipe that was posted about a week ago. Sounded wonderful!!!

I always mix my own too. There is a good chance that you will have fresher or better quality spices than the ones used by the off-the-shelf mixes. Moisture is very important in sausage and some of the recipes I use will have minced garlic, onion or fresh herbs in addition to dried ingredients. But the #1 reason I like to mix my own is that I can add, subtract or tickle any ingredient to suit my tastes.
