• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

For a sausage entry for a contest, can it be a fatty type entry or does it have to be in a casing? And can the fish entry be shell fish, or doe sit have to be a steak or filet. My question is for the hudson valley rib fest which doesnt specify on the fish entry?

Sausage is pretty much wide open as far as I have seen at comps. I have placed well with a simple maple fatty. Don't know about the fish.
 
Here's what I found in the entry packet about fish. Sausage is pretty open, aside from KCBS rules regarding garnish and sauce:

The fish may be from either fresh or saltwater fish. Only one type of fish may be used. Fish may be left whole for presentation. All other entries must consist of six or more identifiable pieces. KCBS garnish rules apply to all entries.​
