• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Sauces that people add Liquid Smoke?

Is liquid smoke a valid component in homemade sauces?

I keep seeing tons of homemade sauces that everyone has liquid smoke in... I have gotten 4 random store bought sauces that all have LQ Smoke added, and I have hated them all. I always was a fan of letting the smoke of the meat stand on its own and letting the sauce compliment it. Thoughts?
 
I don't use it in my sauces, but IMO it is a valid ingredient that has its place in the pantry. During the winter I use it in crock-pot pulled pork and it comes out great.
 
Valid component, yes. Necessity, no.

You need to realize, that BBQ sauce is not just used on properly smoked meat. It can add needed flavor to other types of cooked meats, etc.
 
I don't add it, but one of my favorite sauces, Show Me Sauce from Colombia, Mo. has it in it and I don't mind it.
 
We've never even given it a thought. sauce is something that adds to the flavor of the meat. If cooking the meat with salt and pepper is not enough to make it delicious, sauce will not make it better.
 
I don't use it but don't really have a problem with others using it. If they like it oh well.

I also will use a good quality liquid smoke when making pulled pork (Kahlua pork) in my crockpot.

Heck...I'll sometimes even do that in the summertime. :)
 
To each their own. I used to use a very small amount in my sauce to give it some Umami, but I have eliminated it in my current recipe and added some strong dark coffee instead.
 
I'm real turned off to rubs/sauces that have smoke flavor. I make the mistake of buying rubs without checking ingredients sometimes. As soon as I get home and try a taste I can immediately detect the smoke flavoring, and will not use it. The Weber burger seasoning I bought last weekend has natural smoke flavoring, I threw it out.

If it's easily detected, they've used too much.
 
I usually make my sauce, put it in a foil pan, and then throw it on the smoker with my meat. This lets the sauce get a little real smoke and it makes the sauce really easy to put on my ribs before wrapping.
 
Yes it is a valid addition to sauces. I have had very good sauces that contained smoke flavor (Baby Ray, KC masterpiece, other local sauces to me, to name a few). I have also had a couple that don't have any. I have been trying over the last 6 months to look at ingredients on sauces I buy for NO added smoke flavor and see how they work with my BBQ. I have not made sauce yet, but I look for recipes without liquid smoke. I haven't used it in 13 yrs. My mom has always used it to make a good oven cooked brisket but I have no other good uses for it after I got my smokers.
