2nd smoke on the new pit. 3 racks of spares, cooked at 300 for 3 hours. I thought that was way too quick but they passed the bend test. These ribs were cooked perfect, and they went damn fast! Threw on some Italian sausages too. Still learning on the new pit....practice is a helluva lotta fun!
