Saturday Night Steak

It was a beautiful day in southeastern PA - and we had a one bone prime bone in rib steak on the freezer...

Let is go about 90 minutes in a 275 Egg... pulled it and fired it up to let let the potatoes get done - then seared both sides...

Thanks folks - I gave it some kosher salt before it went on, then put it on the top shelf of my adjustable rig at about 250-275 for 90 minutes or so. IT was about 125*. Took it off and let her rest a while. Then opened up the Egg to about 450 so the potatoes would finish cooking. When they were done, I put the steak back on and seared it for 2 minutes a side. Steak and potatoes - simple and delicious.
