• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Not bad,Old man!I say that in jest.We had a Frito pie my sweetie picked off the webby thing.It was tolerable at best.I made suggestions to improve it but was met with rolling eyes.I let her run her course.Pitiful,just pitiful.I ate a few bites.Like I said,,,pitiful.Sad waste of meat.She pretended to like it but I could tell.Just to;save face.
 
Amen. I need to throw another couple fatties on to smoke next time I do so.

Wish we had such sausage options at our fingertips... looks like you folks really ate well... or will soon do so.
 
Whew, ok, fine job the cook. In your experience do you know how to keep the casing tender on fresh sausage when you smoke it? Always turns out tuff for me as opposed to on the stove top
 
Natural sheepskin raw sausage hasn’t posed much of a problem with tough casings for me. Precooked Sausage seems worse, however both can be simmered for 20 minutes then grilled. Or even reverse that and grill then simmer. Might see if that’ll work. Simmering in onions butter and beer then grilling then returning to the butter beer and onion is pretty solid.

Good tip. We like Slovachek's BBQ sausage fresh off the smoker.

Yep, that's how most of the cheeseheads north of the cheddar curtain cook their brats. And a lot of us Fibs do so as well.
 
I picked those small Slovacek Sausages at a HEB Lubbock. They’re called BBQ Sausage. They’re precooked but juicy and mild.
