I'm watching this on Food Network right now. Sandra is use a WSM! The thing is brand spanking new. the grates are still silver (were mine like that once?).
BUT... She started it up with about 3/4 chimney of "hardwood briquettes" which were really lump and no over fuel. On top of hat she put in a foil packet full of soaked wood chips! Someone needs to teach her how to iuse a WSM.
She just put a whole chicken onto the lower grate and she said that she is going to cook it until the internal temp is 180! She's also going to do ribs. Should be interesting.
