• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I was talking BBQ with a guy last night (imagine that) and he said the key to good chicken and turkey is to rub it with butter before putting it on the cooker. He also said the butter will help tenderize a steak and brisket. He sounds very convincing and I will probably give it a try. Anyone else heard of this?
 
I've used margarine or butter on chicken, turkey and ribs. I also put a pat of butter on a steak if I am broiling it...
 
All I've noticed is that butter or oil will really crisp up the chicken/turkey skin if you're grilling them. Probably helps keep the juices in.
 
When I smoke Turkey every Thanksgiving, I make a Mixture of Butter & Rub and keep it in the fridge. Every hour or two I take a bunch in my hand and spread it all over the bird like Im putting on lotion. Then I throw a hunk in the cavity and let it melt in there. It makes a pretty darn good bird.
Probably not the best for ya. But ya know. Guys Gotta Do What A Guys Gotta Do!
 
I've put butter on my steaks if grilling them, but I have never tried it on any smoked meats.

But I do make this Butter based bbq sauce:
6tablespoonBacon drippings6tablespoonButter1Medium onion, chopped½cupWhite vinegarJuice of two lemons2tablespoonWorcestershire sauce2teaspoonFresh ground black pepper1teaspoonDry mustard1teaspoonSalt
In a saucepan, melt the bacon drippings and butter over medium heat. Add the onions and saute‚ for about 5 minutes, or until quite soft. Mix in the remaining ingredients, reduce the heat to low, and simmer for 5 minutes. Use the sauce warm. It keeps, refrigerated, for at least a week.

If that doesn't clog an artery I don't know what will 8-)
 
i use butter on my birds all the time. i also will mix white wine and butter and dip a piece of cheese cloth in and drape over the bird.
steak and butter are a great combo i make a garlic butter and kosher salt spread that i will rub the meat with while cooking it
 
I always used butter on chicken and turkey. Last weekend I did a chicken and used evoo instead of butter. It turned the chicken way too dark for me. Now I'm back to butter.
 
I've heard of people using spray butter on chicken. But that was just to help crisp the skin. I've never tried it personally.

That's the way I do it as well......Plus everything is better with butter!!:mrgreen:
 
I use the butter flavored "Pam" after I rinse and dry the meat. It holds rub about as well as a mustard slather.
Plus it smells so dam gooood...

Just let the butter get to ALMOST room temp and mash it up with your rub. Start at the end of the chicken, breast up, and separate the skin from the meat. Load up a spoon with the butter and run it between the skin and meat. Rub it around and cook it. Did this last night on the rotisserie and it was great.:biggrin:
