I wanted to try out the Berkel Slicer on something else, so I decided I would try my hand at Roast Beef deli-cut for sammies. I was not sure what cut is usually used for this, but my local grocer had "eye of round" on sale, so I figured it ought to work (I was right). I seasoned the roast with Smokin Guns and Dizzy Dust and put it in the WSM at 240 for about 2.5 hours till it reached 150 internal, I wrapped and let it set in foil for about 15 minutes and took a picture of the smoke ring, then put it in the freezer for about 3 hours till it was sufficiently chilled to slice. The Berkel works just great, and the Roast Beast came out just fine. BTW, anyone know what cut is usually used? I should have brought the temp up another 10 degrees internally, but live and learn. Only four pics, but you get the idea.

More great ideas, why pay for over priced deli beef when you can make your own for much less. Going to put the meat slicer to more use than just rubens. Thanks for the tip.

I agree that is an excellent idea for lunch sandwiches. Roast beef is one of my favorites and that looks perfect.
 
Dang it...now I have to go find out how much a deli slicer will cost me.
I REALLY love roast beef - especially in the form of a french-dip sammich.
