• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

For years my now former neighbor and I have enjoyed bbqing and grilling...well mostly i was cooking but recently he's been learning the ropes for himself. Mostly he's been learning on a gasser and a kettle that was donated by a brethren. Today he received the vertical offset he recently purchased and he called me by to help put it together and to break her in.

He purchased the dyna glow vertical offset. This pit is on the low end of cost and quality but hey its his first smoker and the one he wanted for what he could afford.

Here he is posing next to the newly constructed smoker



I gave him some fire wood, cut to length and split to a usable size for the pit. This should get him started.




Ritch wanted to do chicken thighs, i picked up a sausage chub as a fatty should always be part of an inaugural cook.




I helped set up and get things going in an effort to shorten his learning curve but this was his cook. We put a water pan in place to double as a baffle which is definitely a needed mod.

I think the water pan baffle was stiffling airflow so we moved it from the lower rack to the bottom of the smoker.



I also found the intake lacking and got a cleaner burn leaving the door slightly cracked.

Good first cook. I think he has the tools to fly %100 solo next time. Cant wait to see what he does next.

As flimsy as that COS is its kinda fun to cook on.

Man, This was ALMOST my first smoker!! I was dead set on it, was gonna buy it without considering anything else because I really like the vertical design. Then I seen the brinkmann trailmaster and feel in love. I know the brinkmann isn't much but I really enjoy it when I have a good cook on it!

are there any good quality vertical offset/stickburners out there? If there is, and there's a payment plan available This might be an option for me getting something with good quality. Love the vertical design
 
Once bitten... That'll last him while he can save up for something better...

Oh i was expecting ritchie rich and his custom offset smoker! Ya know hanging in his Florida room sipping a IPL while the custom offset was chugging along outside. :razz:

Food looks great. Nothin' wrong at all with cutting your teeth on a COS. I'm sure many of us did including yours truly. Mine was the Chargriller Duo. Like Bludawg said, great way to learn fire management. I look back with fondness on those days. That's what got me hooking on Q'ing and I'm thankful for it.

Hope hee gets bitten as well. Only gets better from here !

Sure there are. I am aware of several brethren who own LSG vertical offsets.

Remember that BBQ Brethren has origins in these style of pits.

OH man, I didn't even know something like that existed!! Just looked at their 24x30 vertical offset!!! Something like that is officially my dream smoker. I like burning with wood, Don't think I could go with a Yoder all though they are niiice!
 
Looks like it cooked fine, and he has a good mentor along for the ride.

The journey continues

Ribs this time. I brought some vac sealed pulled pork and brisket. I heated them up for burnt ends and mixed up the pork with shack attack sauce (i still cant get enough of it)


Todays lesson was hot and fast weeping ribs.

Gettin closer



No wrapping, no gimmicks. Just rub and smoke. Ran 300 give or take until the ribs foamed up nicely. I think these took 3 hrs but I'm not sure as the beers might have distorted time a bit.
