• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I currently have a rack of spares on the UDS but can't get the temp below 350. Any tips on how to cook them at that temp? I was planning to do 3-2-1

Are you running any type of diffuser between the fire and the ribs? If not, I would. Even a layer of foIL on a lower rack will help.
 
My UDS is tricky too. I usually have to continually adjust the vents on the bottom and the stack. Try completely closing the bottom and see where it goes. This is why I'm looking for a vert smoker.
