• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Thanks to everyone who chimmed in w/ ideas on the Rib flap meat...did these Sun. night, things I learned need to cook pork longer before skewing did a total of 2.5 hrs...meat was great, but could have been more tender, smoked vegetable were great! esp. the red onions!
Also did a Meatloaf, biggest thing I learned? Don't start helping son w/ homework in the middle of preparing to smoke! LOL! Started late ended late, ate late!:eek:
Sauteed carrots,onions, celery, mixed with ground beef. Seasoned w/ Ground Black pepper, Hawaiian salt... cooked all on the Weber, indirect, Guava wood, at about 300* Threw on some "Okinawan Sweet Potatoes" Good stuff!
Took about 3.5 hrs.
Sweet potatoes were very dry! Can anyone help? They're usually great steamed...

That's some fine looking eating you got going on.....mmmmmm meat loaf.
What did you use to sauce the k-bobs? Perhaps you could foil them taters
with butter and maybe brown sugar when you cook 'em?
 
That isn't Taro?

No not Taro, Mista, even I don't eat that! LOL! Thats a really aquired taste! They use this potato in the Luau's, usually very sweet. These were huge ones though, looked like yams, I usually only see them small, no bigger than 6 inches...

N8man, normally you just steam these guys in the "Imu", underqround oven, no seasonings, good just plain... The sauce was from Smokingator, a local sauce, forgot the name! Nice and Spicy...
 
Liking that Weber are we???

I do sweet potatoes a lot on the grill/smoker. I just wrap them in foil and throw em on the side. When they start getting soft I open the foil so the skins get nice and done... almost crispy. Cut em open and throw on a slab of butter....MMMMmmm!!!!

I like the kabob idea. I'll have to give that a try.
 
The kabobs & loaf look great. For me, I rub my taters with a a little butter the wrap in foil. Have not had them dry out yet. I do my onions that way as well.
 
Alright you farkers....let me tell you about the Okinawan sweet potatoe, they are the farkin best! I thought about packin my bags one time with a chit load of em a few years back and puttin em on the plane with me. It seems California dosen't like fruit and vegitables from other states. My arse woulda been sent up if they caught me. These potatoes are that good.

More importantly...

Question: what was that sauce you put on dim kabobs?
