Started the holiday weekend early. Left work shortly after lunch and headed to Costco to check out their inventory. Weird seeing empty refrigerated cases that used to hold tons of chicken.
Ended up picking up a USDA prime tomahawk that weighed in at 2.5 lbs. Since it was a holiday weekend, didn’t worry too much about the price. Heavy coat of SPOG and rested it while I fired up the Fornetto Basso bullet smoker with Weber briquettes (also from Costco). Got it up and running at about 275. Threw on a couple of hickory chunks and took it to 125. Placed the grate directly over the roaring coals and seared for a minute and a half per side.
Unfortunately, the kids have caught on to my secret and now demand their equal share of the cap.
