hello everyone, first time poster long time reader

My friend just brought over a 8lb pork shoulder and 10lb brisket for me today, the place he buys it from is closed by the time i get off work.

Now i'm planning on smoking these up on Sunday so nwo the question is, is it safe to put it in the fridge up until i put the rub on saturday or should i freeze it and let it thaw out on saturday?

Im excited because i finally got a packer brisket and a proper bone in shoulder butt..had a tough time finding it up here in Vancouver!
 
If the sell by date on the meat is before Saturday freeze, if not it will be fine in the fridge. No different than in a grocery store cooler.
 
Fridge, It takes more than a day to thaw a butt or a brisket. Rinse both well wheen you take out of the packaging.
