• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Red beans and rice recipes w/o pork

Hey, my wife has an allergy to pork so I can't use any in whatever I cook. So, I am wondering if you brothers and sisters have a recipe for this without using any ham hocks or pork meat? Can't really seem to find any online anywhere. Thanks for any help, Tim.
 
Dont see why you couldnt Blacken a Chicken and use that meat as a Sub in that kind of a recipie.

How about chicken sausage? That would be good.

When I cook briskets I leave some of the fat cap on and after its done I trim it and bag it for beans.

Wow, I could not imagine having a pork allergy.

My vote is torn between the chicken sausage and brisket fat cap.
 
Smoked turkey wings

My first thought was smoked turkey. Wings, yes, but smoked drumsticks and thighs are mighty good as seasoning meat too.

Beef sausage good too. I also usually use combo of smoked meat and susage.
 
Yeah, What everyone else said.

I have always been a Beef and Pork guy until I started(my wife made me) tryinf more chicken and turkey substitutes for things. Collard greens with smoked turkey in it is mighty fine eatin. Red Beans and Rice sounds pretty good too. I'd say sitck with the dark meat on the chicken/Turkey for the flavoring side of it. Being a little fattier(is that actually a word?), I would think it would gie a little more to the meal.

I'm no pro by any means but it saounds good anyway.
 
Thanks for the replies. I really like the idea of using some smoked chicken or turkey while cooking things up, and maybe some blackened chicken once things are done. Oh man, that's making me hungry. I'll post some pics when I try this one out. Thanks again, Tim.
